I am looking into getting a Associate in Arts degree in Drafting and Design Technology with Computer Aided Drafting classes. What are somethings I need to look for in a degree program? How do I get into a specific specialization without going beyond an AA degree. thanks for the help and im sorry if this post is in the wrong place!

Basic, intermediate and advanced CAD courses that take one from 2D into 3D. Multi-disciplinary approach (architectural, mechanical, etc.). Knowledgeable instructors. It helps if the instructor has worked "in the field". A school that's been doing this for more than a year.
You can specialize without going beyond an associate's degree by taking classes at AutoDesk University, at your local community college, and/or by taking online classes.
