At my work we plot some of the plans in color so that they will be easier for the electricians to read. However, when we plot something that has things in blue, it looks more purple than blue. Just curious, does that happen to anyone else? I have an hp designjet 500ps.

More than likely this is because your monitor shows colors in RGB mode, while plotters print in CMYK. In my field we also set utility layers to print in color. A new way I've accomplished this, is by picking a color under the "true color" tab. I chose this method because it always prints in color, regardless of your .ctb, and because I don't sacrifice any index colors. I also noticed, to answer your question, that what shows up on screen is fairly similar to what prints out. Hope this helps...

So is there a way that I can change the RGB or CMYK mode? I don't want it to always plot in color because we do need it in black and white as well.
It's weird too that on screen the color looks right- it's blue. So I don't know. . .
