I have a drawing (DWG) that was created with another CAD program. I am trying to create a PDF in AutoCAD from the file and every time I try to plot to PDF it comes out in color regardless of the plot setting I choose. I tried using “convertpstyles” but have had no luck. Does anyone know how to resolve this?

In the plot settings choose to print in Grayscale, or Black & White.

Have you tried using the 'monochrome' pen table? Also try plotting to DWF rather than PDF. The file sizes are much smaller and stops a lot of the plotting issues usually associated with PDF's.
