You're creating something which is substantially similar to the NURBs that you use in Max, but they have a completely different function. A surface in Inventor is used as a tool to help create an object. A surface in Max (and most other similar 3D software - Maya, Lightwave, etc.) is the object. Also, you can't edit a surface in Inventor by dragging points and polys around. You have to edit the geometry used to create the surface instead. (most of them are a little old - but the Vacuum tutorial is fairly up-to-date) With Inventor 2012 you will also want to investigate the Edit Form (Alias Edit) link to Inventor Fusion.
