Our company does really weird shapes and designs for concrete patios/decks...

we recently purchased a tablet/mouse that lets you pretty much freehand everything, but AutoCAD, i'm coming to find out, doesnt have a freehand tool to let me trace exist. pools and such... so far i've been using the polyline tool, but there has to be an easier way...

Is there a freehand tool?

Ensure that SKPOLY system variable is set to 1 - then use sketch command. This will give you a polyline in increments of your choice (choose when you invoke the sketch command).

I'm assuming you want to freehand these pools because they are irregular in shape. If I were doing this, I'd find as many points as possible for this shape and connect them using the spline function.

The SKETCH command is what you're looking for if you still want to freehand these drawings. Keep in mind that all this does is create several polylines in increments of your choice.
