Try DIMSTYLE, select new, or modify an existing one. see pic,
here you can set your Unit, Arrows, Text etc...
although I'm in 2004 it might vary in 2008

Embarrassed still can't see the text

I still can't see the text when I put a dimension in there. Is there any thing else I can do? maybe there is a box I didn't see that says show text?

In the TEXT tab of the Dimstyle you can specify the text style used for dimensioning, create a new text style (FORMAT, TEXTSTYLE)
or specify an existing text style that you are happy with.

Have a read of the Acad help... here is an extract

Control the Text Style in Dimensions

The appearance of dimension text is governed by the text style selected in the Dimension Style Manager, Text tab. You can choose a text style while creating a dimension style and specify a text color and a height independent of the current text style's height setting. You can also specify the gap between base dimension text and the box that surrounds it.

    Question new prob.

Now, I can't change what my text says. I remember being able to double click on it and it would let you change it. I want it to say one thing but it says another. Any help is good help

Try right click on it and select properties.

I would do the same as Littlemouse. I'd double click on a dimension to change it. Now I have to change it through properties and fill in the box, text overide.

It's a lot slower. Is there any way I can do it as before?

You can always use text edit.
