Is there a way to set the default print settings so that it always chooses the correct printer, print size, centering, etc.?

Try to create a template drawing. I have a template drawing containing all the possible paper formats and printers (each setting on a different layout). After the drawing is complete I just delete the unused layouts.
It's nice to be nice, but sometimes is nicer to be evil!.

After you get your settings the way you want them, name the Page Setup and click the Apply to Layout button.

If you want to change any settings afterwards, you have to add a page setup using the same name again, and click Yes when asked if you want to redefine the page setup (one of ACAD's many counter-intuitive ways of doing things).
