ggodwin
WOW! It must be the sleep I got last night! I finally found what I was looking for. For anybody else that has this problem, there is a tiny down to the right point arrow on the Annotate Dimension menu bar. Once you select that it is pretty straight forward on how to set and name your own style.
Car5858
You can also access that through Format> textstyle. If you want the menu bar at the top of the window type > menubar (in the command line)> change the value to 1, This will enable you to find many different options and menus quickly.
