Before and after quarry contours

We are currently doing work for a client that is quarrying a hole into the ground, there has been finished side slopes and base levels agreed with the regulator already, of which I have made a finished contour map of. Yesterday I surveyed the site myself to find how much they have taken out and again produced a contour map of the current situation.

Now, my question is there some way of creating another contour map of the site showing them how much to take out or add back in to reach the agreed completion levels ect? Or may even a map with spot heights showing the differnece between current levels and agreed finished levels.
