How to Define Material in Solidworks 2008?

Are you wishing to define the material of the object(ie aluminum) or change the appearance of the object(ie powder coat).

If you are trying to change your material there are a few ways to get to it. One way is to right click on the name of your part at the top of the Feature Tree. In the pop up window go down to Appearance>Edit Material. Also in your feature tree you should have a Material heading under the Solid Bodies folder just above your standard planes. If you right click on that you can apply some of the standard materials or go to the Edit Materials window from there.
