Font Mixup When Publishing to PDF

I have a beautifully prepared shop drawing with 28 layout tabs setup for Arch D paper. The fonts I'm using in AutoCAD 2010 are Arial & Architext. The problem is when I publish the drawing to PDF the Arial font changes to something else. It's not a bad looking font but it has serifs and is not the way I want this drawing to look.

 

I have the Arial font setup in all my other applications, including my PDF software, I use Adobe and Bluebeam Revu. No other apps give me this problem. This seems to only be happening when I use PUBLISH. If I plot the sheets individually the fonts are okay.
