    Default Dimensions with arc?

    When I pull a piece of text away from a dimension line, is there a way to make the associative line that appears an arc instead of a line?

    Yes, it is a dimension. But you elected you pull it away from its normal location and won't accept the default leader that is substituted. That's life.
