Hi guys,
I'm pretty new at working in AutoCAD Civil, so, here it goes!
I'm trying to get a label 5m from a given line, showing a discription given bij the surveyors. How on earth should I do this for a polyline? I know it's possible for points...

Autocad Map/Civil are able to label points by node, or polygons by centroid, whereas a polyline has no "center" to hook to...

This is very much possible. I am going thru the same thing. EXACTLY!!!
I am stil trying to find the best possible way to do this effieciently, but play around (if time permits) with this..
RIBBON>ANNOTATE
Select your feature to be Line and curve and start playing with all those label styles. I have currently made one that will label my lines with an Azimuth and Distance offset from the line. You can make one for pretty much anything.
The downside to these is the information it gathers is populated by the line segments properties and i do not think there is a manual text override option for these label styles.
This is where burst and explode are your friends.
I know this wasn't the bets help for you but i can assure you what you need done can be done.

You can edit the information contained in your line labels. In the Label Style Composer, under the Layout tab, you can change the value in the Contents property, just like you created your Azimuth label. I use line labels for lots of things, not just labeling section lines and other distances, but also for labeling fences, roads and anything else that needs to be annotated along a line or polyline. That way if I drag the label off the line it creates a leader to the line.
