Master Cad File

If your work involves drawing electrical schematics all day and not much more you could continue to work solely in model space for the remainder of your CAD career. Why? Because scale doesn't matter. The same thing applies to people like myself who draw process piping and instrumentation diagrams. Scale is virtually irrelevant. Now if you also do cabinet layouts then I would strongly suggest you at least give paper space and their viewports a try before dismissing them completely out of hand.

 

As far as one drawing per CAD file I think that is totally up to the company you work for. Many of our fabrication drawings for tanks and reactors required multiple sheets yet we keep everything in one drawing file and make use of layouts for each sheet. There is no "industry standard" guidelines for this as far as I know.
