How you can hide the specific layers when plotting in Autocad?

Set the layer to "no plot" or "Freeze" the Layer in the Layer Manager or Layer Tools on the Ribbon. You could also make them color 255, 255, 255.

This is one of the big advantages of Model Space. When you use viewports, you can turn off a layer in a specific viewport, but it stays on everywhere else.

 

You can also define a layer as No Plot, as SLW210 suggests. In that case it will appear normally, but it will never print. Be careful about accidentally setting a layer to No Plot when you do want it to print.
