Should Be Easy Enough

...But when i close the tool palettes on MEP, HVAC, Architectural etc... Is there a command which will reopen these without changing my screen setup. (toolbars etc)

I would suggest that after setting up your workspace just the way you want it you save it. Simple as that.

To save a workspace you can click the Workspace Switching icon (kind of looks like a gear) > Workspace Settings > Save Workspace, or click on Tools > Workspaces > Save Current As (under the Menu Browser button), or at the command line type Workspace or WSSAVE.
