AS we are changing over from SolidWorks to Inventor, I am still somewhat confused about the delineation between the two. I am trying to create a model in Inventor with different configs in the same model, say stock and machined conditions. Is there a way to do that in Inventor?:?

You might want to download iLogic from your subscription site.

In Inventor you would normally start a new part, exit sketch mode and Derive Component and select the original to edit to machined.
(there are two different workflows, most prefer to do the machined state first and then do the derived as the stock which is the opposite of the real world but easier. the other workflow is to do exacty as done out on the shop floor)

As you are making the transition you are likely to run into some frustrations - I suggest you start with this document http://home.pct.edu/~jmather/AU2007/MA105-1L%20Mather.pdf

There is also a three day AOTC course you can buy for users transitioning from SolidWorks to IV, but must be purchased through a reseller.

You have heard of the recession? There will be no training money, it will sink or swim for me!

So, just buy the book and not the instructor led training.

Best bet is to do a course, that way you can pick at the tutor on questions you want answered.
