I know this is a simple task... or at least should be. I recall something about "history" but can't find an answer.

You should be able to CTRL+ Click on the object you want to un-union and drag it out of the other object, provided you had SOLIDHISTORY enabled when you created the union.

I think AutoCAD 2016 has a UN-Union command and a RE-Union command and it brought back the Soviet-Union command. LoL

In Mother Russia, they just turn off your personal history and you disappear!

If you have disjointed solid bodies - solidedit separate is one possible technique.
